
Angel Food Cake is a fat free form of sponge cake that became popular in the US late in the 19th century, and is called Angel Food due to its light airy texture. It is said to be food of the Angels.
Bernard Angel Food Cakes can be baked in tall pans, also known as angel food cake pans, tube pans or even sheet pans, but always in a clean ungreased pan.
Angel food cake should also be allowed to cool up-side down in order to hold its rise.
Due to the delicate, light texture of Angel Food cakes, always use a serrated knife when cutting.
